Holiday Fondue
That’s right, this holiday season we are making fondue! A fondue party is a cheese lover’s party. Tradition says that if the item you’re dipping comes off of their fork, men must open another bottle of wine and women must kiss the man to your left! Now that’s the way to get a party going! No wonder fondue was so popular back in the ‘70s. Lucky for us, fondue is back in fashion with all its cheesy goodness.
The word fondue comes from the French word fondre – to melt or blend. Shredded cheese is combined with dry white wine and flour to create a savory cheese sauce, kept warm in a fondue pot and served with bite size cubes of crusty bread for dipping.
Cheese fondue originated in the Alps. As the dark, snowy winter wore on and food supplies were low, cheese, bread and wine were usually on hand (love this, sounds like my house). It was a necessity, no doubt, that led to the innovation of melting hard cheese with wine in a large pot over an open fire. You can imagine families gathered around their hearths softening pieces of hard bread in warm cheese, eating, and conversing.
