So we invite top local experts and educators, including natural chefs, holistic nutritionists, acupuncturists, herbalists, and naturopathic doctors to share their knowledge with you in classes and workshops we host here at New Leaf. Class #4 Monday, January 30: Eat More Veggies- Ever heard of nutrient density? This is a term that measures the nutrient concentration in a food, per calorie. Vegetables are at the top of this list. Low in carbohydrates but chock full of vitamins and minerals, veggies come in a rainbow of colors, and each color signifies a unique nutrient composition.

Forks Over Knives (2011) is an film that examines a profound claim that food is medicine! The major storyline in the film traces the personal journeys of a pair of pioneering researchers, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn, and their groundbreaking studies that brought them to meet each other.
Their research led them separately to the startling and now shared conclusion: degenerative diseases like heart disease, type 2 diabetes, and even several forms of cancer, could almost always be prevented—and in many cases reversed—by adopting a whole-foods, plant-based diet.
