A big part of our mission is to provide the latest information about health, nutrition and wellness to our community. So we invite top local experts and educators, including natural chefs, holistic nutritionists, acupuncturists, herbalists, and naturopathic doctors to share their knowledge with you in classes and workshops we host here at New Leaf.  Hula for Heart – A six-week introductory workshop Experience the meaning of Aloha as you learn the dance of Hawaiʻi, the hula. In this six-week workshop, we will learn basic steps, form and technique, and choreographed dances to three songs in both ancient-style and modern-style hula. We will discover some of the history, culture, and language too, for the hula is not just a dance – it is a cultural experience. Class Syllabus Week 1 – October 2 Introductions Brief discussion: What is hula? Why is it important to learn the language, culture, and history when we dance the hula? Jason Mousel is a Registered Dietitian  and has a Master's Degree in Nutritional Science from San Jose State University. He practices as a clinical Dietitian at Sequoia Hospital, provides nutrition counseling at the San Francisco Free Clinic and is an instructor at San Francisco State University in the Holistic Health Department. Jason serves on the board of directors for The Heal Project, providing nutrition and health education and inspiration to schoolchildren in San Mateo County. In his free time, Jason enjoys cooking, hiking, yoga, and walking on the beach with his dog.

Traditional Japanese Fermented Foods Series

With Eriko Yokoyama and Masumi Diaz This class series will use a traditional culture called Koji. Koji is rice inoculated with the special and safe bacteria called Aspergillus oryzae. Koji has been the key ingredient to make miso, soy sauce, sake, mirin, rice vinegar, amazake, shochu, and shio- Koji.  It’s a live food that is rich in enzymes that break down starches and proteins in food into sugars and amino acids and has many health benefits, including: *Promotes beneficial healthy gut bacteria *Full of beneficial enzymes. *High in nutrients, including B vitamins, biotin and folic acid. *Increases bioavailability of minerals. *Contains short-chain fatty acids, which help improve immune system function. This series breaks down as follows: Class #1: Thursday, October 12: Miso Miso is a delicious, high-protein seasoning that has been used everyday in the Japanese kitchen for 1300 years. Miso is made with cooked soybeans, Koji and sea salt, then fermented for about 6 months. The fermentation process restores beneficial probiotic that helps break down the amino acids in soybeans and make other foods easier to digest. In this class you’ll learn how to make 2 lb organic miso to take home, and learn the many different ways that miso is used. Since this is a simple but lengthy process, we will prepare for you in advance and explain how we did it.    Class #2: Thursday, October 26: Amazake Ama-zake (meaning sweet sake) is a Japanese traditional sweet, non-alcoholic drink made with cooked rice (porridge) or cooked oatmeal, and rice Koji. Amazake is believed to be very nutritious. It contains Vitamin B1, B2, B6, Folic acid, Dietary fiber. Amazake can be eaten as a dessert, snack, and can be used as a natural sweetening agent in baby food, salad dressing, smoothies, etc. It is often considered a hangover cure in Japan. In this class, you will learn how to make and use amazake. You will also have an opportunity to taste variety of amazake.   Class #3: Thursday, November 9: Shio-Koji Shio- Koji is a fermented mixture of Koji and shio (sea salt) and water – as a substitute seasoning of salt and has significant health benefit as other fermented food. It can marinate meat, chicken and fish to tenderize and enhance umami; makes quick pickles; and can be added to both savory and sweet dishes. This class offers how to prepare shio- Koji and recipes including using on turkey- just in time for Thanksgiving! About the instructors: Health nut friends Eriko and Masumi started making Miso, Natto, Pickled plum and Sauerkrau together for the family more than a decade ago. They learned so many things over the years about fermented foods and recognized the importance and benefits of it for gastrointestinal health. Both Eriko and Masumi grew up with a probiotic-rich traditional Japanese diet in Japan. Eriko learned authentic French cooking at Le Cordon Bleu in Paris and owned a restaurant for 13 years. And now Masumi and Eriko are passionate about sharing the fermented food classes with our community!

Heightening Your Food Pleasure with Christina Waters: a New Leaf Exclusive!

Join Christina Waters, PhD—renowned Santa Cruz-based food, wine, and arts columnist, and UCSC lecturer—for an intimate interactive workshop about getting more pleasure from food. Ms. Waters has been a restaurant reviewer for more than two decades, and she is the author of Inside the Flame, a memoir of sensory adventures and tactile exploration. In this workshop, Christina will share the story of how she fell in love with food, outline her personal lifestyle philosophy, and offer suggestions for making food choices to maximize sensory enjoyment. Christina will guide discussion to help you explore the reasons for your food choices and dining habits. You’ll be prompted to answer questions such as: What are the foods you love most and why? How does the context—people, place, occasion—influence your food experience? How often do you prepare a meal, or a dish, with your own hands and how does that feel? What were your favorite, or most regretted, dining experiences? Life's too short to eat meaningless food! Savor the radical potential of seasonal flavors! We'll discuss ways in which you can choose the most vibrant, seasonal ingredients that will increase your enjoyment of one of life's daily necessities. Food is not just fuel!  It's a pleasure! Throughout our discussion, we’ll enjoy samples of exciting flavors, compliments of New Leaf. About the Instructor: Trained in the art of adventurous living, Christina Waters is a fifth generation Santa Cruz native, raised all over the world (thanks to an Air Force dad), with an academic background and real world experience in journalism, painting, wine-tasting, music, woodworking, hang gliding, trail running, reiki, and organic gardening. Born in Santa Cruz, California, she grew up in France, Germany, Virginia, and California. Instilled with a lifelong passion for travel, she lived in the redwoods before attending graduate school at University of California in Davis. After a brief stay in San Francisco working at SF State, she moved back to her birthplace, Santa Cruz, CA, to finish her dissertation in Jean-Paul Sartre's theory of the imagination. With the PhD completed, she began teaching at UCSC, including Environmental Ethics, Writing for Visual Artists, and a Film course on Digital Dystopias. An accomplished musician, she performs with the UCSC Concert Choir and regularly exhibits her expressionist oil portraits in local galleries. She currently teaches and writes in Santa Cruz. In her spare time she haunts the opera houses of the world.

California Coastal Foraging: Cooking with Wild Seaweeds

Cooking Demo with Ian O'Hollaren, founder of Seaquoia Wild Seaweeds & Nutrition Consultant Madia Jamgochian Did you know that sea vegetables, also known as seaweeds, are a nutritional powerhouse packed with protein, vitamins and minerals? Rich in iodine, sea vegetables can play an important role in providing thyroid support. Seaweeds are also high in calcium, folic acid and magnesium, as well as iron, potassium, and pantothenic acid. Of the brown variety, arame, hijiki, kelp, kombu and wakame are the most popular. Nori, a red seaweed, is perhaps the most well known variety being a main ingredient in sushi rolls. Studies have shown that sea vegetables have been consumed since at least 8000 B.C.E. by cultures in the Japanese region. Today, however, most people have strayed away from including sea vegetables in their every day diet. This class aims to change that by showing you how to utilize fresh sea vegetables harvested just up the coast from Santa Cruz. Come hungry! About the Instructors: Ian O’Hollaren combined his knowledge and passion of the ocean and turned it into a business and lifestyle. For almost 2 years, Seaquoia Wild Seaweeds has been harvesting seaweeds from California’s unique and bio-diverse coastal ecosystem. Ian strives to connect people to the source of their food while promoting environmental awareness, which has been his business philosophy from the start! About the Instructor: Madia graduated from Bauman College of Holistic Nutrition in 2013 after completing her BA in Environmental Studies and Exercise Sports Science at UCSB. Shortly after, she started her personal consulting business My Healing Habits.
