Wellness Series with Kimberly Smith-Martinez, Licensed Psychologist Week 1: Monday, January 22: Intro to Behavior Change Join Kimberly Smith-Martinez, licensed psychologist and wellness coach, for the first of a four part series entitled "Boosting Behavior Change." In this first hour long interactive lecture you will learn about the science behind journaling and how this tool can help increase your awareness when it comes to changing behavior. At the end of the hour, you will know how to begin tracking your Mind, Mouth and Muscle. Week 2: Monday, January 29: Goal Setting  In this week's interactive session you will gain understanding of the importance of being clear on identifying the "Right Whys" when it comes to goal setting. By the end of the hour you will be able to identify about the stage of change you are currently occupy. You will also design your own SMART Goal Plan. Week 3: Monday, February 5: Boredom Busters In this week's interactive session you will learn easy steps to cultivate motivation and learn about NSVs. Week 4: Monday, February 12: Relapse Prevention In this week's interactive session you will gain understanding of Relapse and learn strategies to help you get back on track when you've slipped off your goal. There will be time during this class session to review any questions from the previous weeks as well as celebrate your success thus far! About the Instructor: Kimberly Smith-Martinez is a licensed psychologist (CA #29082) and certified Wellness Coach, with nearly 20 years’ experience, who practices in Santa Cruz. Class # 2 Tuesday, January 23: Choose Smart Carbs- Carbohydrates, often referred to as carbs, are found in more than just bread. Of the three macronutrients – carbohydrates, fat, and protein – carbs have the greatest impact on blood sugar levels. Explore seasonal options for smart carbs, including vegetables, grains, and legumes. Class #3 Tuesday, January 30: Embracing Healthy Fats- Although our modern culture has distorted our perspective on fats, some fats are essential for optimal health. Historical and scientific evidence show that our ancestors did not suffer from many modern chronic diseases even though they ate wholesome, unprocessed fat-rich foods. Discover our favorite sources of fats and how they are part of a healthy diet. Class #4 Tuesday, February 6: Eat More Veggies- Ever heard of nutrient density? This is a term that measures the nutrient concentration in a food, per calorie. Vegetables are at the top of this list. Traditional Japanese Fermented Foods Series

With Eriko Yokoyama and Masumi Diaz of Hakouya Cooking School This class series will use a traditional culture called Koji. Koji is rice inoculated with the special and safe bacteria called Aspergillus oryzae. Koji is the key ingredient used to make miso, soy sauce, sake, mirin, rice vinegar, amazake, shochu, and shio- Koji.  It’s a live food that is rich in enzymes that break down starches and proteins in food into sugars and amino acids and has many health benefits, including: *Promoting beneficial healthy gut bacteria *Full of beneficial enzymes. *High in nutrients, including B vitamins, biotin and folic acid. *Increases bioavailability of minerals. *Contains short-chain fatty acids, which help improve immune system function. This series breaks down as follows: Class #1: Thursday, January 25: Amazake CANCELED DUE TO LOW ENROLLMENT Ama-zake (meaning sweet sake) is a Japanese traditional sweet, non-alcoholic drink made with cooked rice (porridge) or cooked oatmeal, and rice Koji. Amazake is believed to be very nutritious. It contains Vitamin B1, B2, B6, Folic acid, Dietary fiber. Amazake can be eaten as a dessert, snack, and can be used as a natural sweetening agent in baby food, salad dressing, smoothies, etc. It is often considered a hangover cure in Japan. In this class, you will learn how to make and use amazake. You will also have an opportunity to taste variety of amazake. Class #2: Thursday, February 8: Miso Miso is a delicious, high-protein seasoning that has been used everyday in the Japanese kitchen for 1300 years. Miso is made with cooked soybeans, Koji and sea salt, then fermented for about 6 months. The fermentation process restores beneficial probiotic that helps break down the amino acids in soybeans and make other foods easier to digest. In this class you’ll learn how to make 2 lb organic miso to take home, and learn the many different ways that miso is used. Since this is a simple but lengthy process, we will prepare for you in advance and explain how we did it. Class #3: Thursday, February 22: Shio-Koji Shio- Koji is a fermented mixture of Koji and shio (sea salt) and water – as a substitute seasoning of salt and has significant health benefit as other fermented food. It can marinate meat, chicken and fish to tenderize and enhance umami; makes quick pickles; and can be added to both savory and sweet dishes. This class offers how to prepare shio- Koji and recipes including using on turkey- just in time for Thanksgiving! Series Ticket: $100 for all three classes, Drop in Ticket: $35 About the instructors: Health nut friends Eriko and Masumi started making Miso, Natto, Pickled plum and Sauerkrau together for the family more than a decade ago. They learned so many things over the years about fermented foods and recognized the importance and benefits of it for gastrointestinal health. Both Eriko and Masumi grew up with a probiotic-rich traditional Japanese diet in Japan. Eriko learned authentic French cooking at Le Cordon Bleu in Paris and owned a restaurant for 13 years. With Christina Waters, PhD—renowned Santa Cruz-based food, wine, and arts columnist, and UCSC lecturer Join restaurant reviewer and lifelong foodie Christina Waters for an in-depth conversation about her go-to home-cooked dinners, the favorites she loves to make for company dining or special occasions. Everyone has a few sure-fire menus in their culinary arsenal, the dishes that always make a hit and always appeal to friends and family. In this workshop, Waters outlines her personal approach to making fearless, signature dishes. She'll provide an overview of how these meals evolved, how to make them, and why they never fail to please. During the workshop, participants will enjoy cheese, crackers and one of Waters' favorite signature meal-accompanying wines. Participants will take home recipes for the three signature dishes plus handouts of suggestions for wines and accompanying appetizers and side dishes. Come prepared to join in the conversation, learn some delicious menu ideas, and share a few of your own signature dish ideas with other participants. About the Instructor: Trained in the art of adventurous living, Christina Waters is a fifth generation Santa Cruz native, raised all over the world (thanks to an Air Force dad), with an academic background and real world experience in journalism, painting, wine-tasting, music, woodworking, hang gliding, trail running, reiki, and organic gardening. Born in Santa Cruz, California, she grew up in France, Germany, Virginia, and California. Instilled with a lifelong passion for travel, she lived in the redwoods before attending graduate school at University of California in Davis. After a brief stay in San Francisco working at SF State, she moved back to her birthplace, Santa Cruz, CA, to finish her dissertation in Jean-Paul Sartre's theory of the imagination. With the PhD completed, she began teaching at UCSC, including Environmental Ethics, Writing for Visual Artists, and a Film course on Digital Dystopias. An accomplished musician, she performs with the UCSC Concert Choir and regularly exhibits her expressionist oil portraits in local galleries. She currently teaches and writes in Santa Cruz. In her spare time she haunts the opera houses of the world.
