Roasted Pork Tenderloin with Apples 21 September, 2015 | Appetizers & sides, Dessert, Vegetarian, Paleo

  • 2 Tbsp brown sugar
  • 1 tsp paprika
  • 1 tsp rosemary, crushed
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 lb boneless pork tenderloin
  • 2 tablespoons olive oil, divided
  • 2 medium Fuji apples, thinly sliced
  • 1 medium onion, thinly sliced


Preheat oven to 425°F.

Mix brown sugar, paprika, rosemary, garlic powder, and salt in a large bowl.

Once mixed, set aside 1 tbsp for later.

Brush pork with 1 tbsp of the olive oil and sprinkle seasoning mixture

Place in center of large, foil-lined baking dish.

In a medium bowl, toss apples, onions and 1 tbsp olive oil. Add remaining seasoning mixture and toss to coat well. Spread around pork in pan.

Roast 25 to 30 minutes or until pork has internal temperature of 145°.

Slice pork and serve with apples and onions on top.
