- 1 pound pizza dough
- 1 yellow onion, thinly sliced
- 1 bartlett pear, thinly sliced
- 1/2 cup smoked gouda, shredded
- 1/2 cup mozzarella, shredded
- 1/4 cup gorgonzola, crumbled
- 1 tsp. fresh thyme
- 1 tsp. extra virgin olive oil
- 1 tbsp. butter
- Salt and pepper
Preheat oven to 450 degrees.
Spray a baking sheet or pizza stone with cooking spray.
Melt butter in medium sized skillet over medium heat.
Add the sliced onion and slowly cook the onion until caramelized and golden.
Roll out the pizza dough onto the sheet pan or stone.
Brush dough with olive oil and sprinkle on salt, pepper, and the fresh thyme.
Sprinkle dough with shredded cheeses and gorgonzola crumbles.
Arrange slices of pear and caramelized onions evenly over the top of the pizza.
Bake for 10-15 minutes or until cheese is bubbly and golden.
Remove from the oven and serve immediately.
