OVEN ROASTED SAUSAGE, ROOT VEGGIES & APPLES 12 October, 2016 | Salads

Ingredients

  • 2 sweet potatoes, cut into 1/2” cubes
  • 1 sweet onion, sliced
  • 1 cup baby carrots
  • 1 granny smith apple, sliced
  • 4 New Leaf's chicken sausages
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp chopped fresh thyme

Directions

Preheat oven to 400F.
Combine potatoes, onions, carrots, apples, olive oil, salt, pepper, and thyme in a bowl; mix until combined.
Arrange sausages and vegetables on baking sheet in a single layer.
Bake for about 35 minutes, or until sausage reaches an internal temperature of 160 degrees, flipping everything once halfway through.
Serve immediately.
