Just a few ingredients and 10 minutes are all that is needed for this simple and delicious homemade pasta sauce.
- 8-10 organic tomatoes, depending on size
- 5 cloves garlic, minced
- ½ tsp red pepper flakes
- ½ tsp sea salt
- ½ tsp pepper
- 2-3 handfuls of basil, chopped
- Pasta of choice
- Parmesan cheese
- Olive oil
Put a large pot of water on the stove to boil. Wash tomatoes and dice them into 1-inch chunks. Coat the bottom of a large frying pan with olive oil, and add garlic. Cook over medium heat 1-2 minutes, just long enough to infuse the oil with garlic flavor, but not long enough to brown.
Add tomatoes to pan along with salt and pepper. Turn heat up and allow tomatoes to simmer. Using the back of your spoon, or a potato masher, smash tomato chunks to make a smoother sauce. Add red pepper flakes, and simmer tomato sauce for 10-12 minutes, or until the oil begins to pool on top of the sauce. If it gets too thick, thin the sauce with a little water or wine.
Meanwhile, cook pasta according to directions, and strain. Once tomato sauce is finished cooking, stir in basil. At this point, you can add the pasta to the sauce, and mix it together, or top the pasta with sauce on a plate. Sprinkle with parmesan.Recipes Home
