So we invite top local experts and educators, including natural chefs, holistic nutritionists, acupuncturists, herbalists, and naturopathic doctors to share their knowledge with you in classes and workshops we host here at New Leaf. Eaten regularly, a protein-rich breakfast can be life changing! Learn how to incorporate protein-rich foods into your breakfast routine. Get tips for meals outside the breakfast box. Class # 2 Tuesday, January 15: Choose Smart Carbs- Carbohydrates, often referred to as carbs, are found in more than just bread. Of the three macronutrients – carbohydrates, fat, and protein – carbs have the greatest impact on blood sugar levels. Explore seasonal options for smart carbs, including vegetables, grains, and legumes. Class #3 Tuesday, January 22: Embracing Healthy Fats- Although our modern culture has distorted our perspective on fats, some fats are essential for optimal health. Historical and scientific evidence show that our ancestors did not suffer from many modern chronic diseases even though they ate wholesome, unprocessed fat-rich foods. Discover our favorite sources of fats and how they are part of a healthy diet. Class #4 Tuesday, January 29: Eat More Veggies- Ever heard of nutrient density? This is a term that measures the nutrient concentration in a food, per calorie. Vegetables are at the top of this list. Low in carbohydrates but chock full of vitamins and minerals, veggies come in a rainbow of colors, and each color signifies a unique nutrient composition. *Since we only have room for 20 class participants, seat priority will be given to those who pre-registered online. Please let us know if you are unable to make it.* About the Instructor: Madia graduated from Bauman College of Holistic Nutrition in 2013 after completing her BA in Environmental Studies and Exercise Sports Science at UCSB. Shortly after, she started her personal consulting business My Healing Habits. Dim Sum Workshop

With Chef Eric Adema This class will focus on the technique involved in making 5 dim sum favorites.  We will roll out dough and hand press: vegan sweet pea & mushroom Har Gow or “crystal dumplings,” spicy shrimp & scallop shu mai,  pork xiao long bao or “soup dumplings,” BBQ chicken Char Sui Bao or ”steamed buns,” and Hong Kong style egg custard tarts.  The bamboo steamers will be going so we can feast on our creations throughout the whole class.  Beer & wine pairing will be available, and recipes will be provided for doughs, fillings, & dipping sauces.  About the Instructor: Chef Eric Jan Adema first learned his passion for food while cooking his great grandmother’s recipes with his mother as a kid. In 1989 his family took over the Boulders Inn in Connecticut, and by age 24 he became the head chef . In 2003, Eric moved to San Francisco where he worked as a chef & restaurant consultant for over 10 years. He now lives in Boulder Creek .

With Chef Eric Adema, Owner of Plus 1 Catering In this class you will learn the basics of traditional Japanese home cooked meals. We will begin with a quick demo on rice technique, and then make Dashi - which is the base of several popular dishes, including our first dish Miso Soup. Next we will prepare Salmon Teriyaki with a Buckwheat Soba Noodle Salad followed by Pork Tonkatsu with a Curry Ramen Bowl. Cooking with Wild Seaweeds

Cooking Demo with Ian O'Hollaren, founder of Seaquoia Wild Seaweeds & Nutrition Consultant Madia Jamgochian Did you know that sea vegetables, also known as seaweeds, are a nutritional powerhouse packed with protein, vitamins and minerals? Rich in iodine, sea vegetables can play an important role in providing thyroid support. Seaweeds are also high in calcium, folic acid and magnesium, as well as iron, potassium, and pantothenic acid. Of the brown variety, arame, hijiki, kelp, kombu and wakame are the most popular. Nori, a red seaweed, is perhaps the most well known variety being a main ingredient in sushi rolls. Studies have shown that sea vegetables have been consumed since at least 8000 B.C.E. by cultures in the Japanese region. Today, however, most people have strayed away from including sea vegetables in their every day diet. This class aims to change that by showing you how to utilize fresh sea vegetables harvested just up the coast from Santa Cruz. Madia and Ian will show you how to whip up 4-5 different recipes using fresh sea vegetables. Come hungry! About the Instructors: Ian O’Hollaren combined his knowledge and passion of the ocean and turned it into a business and lifestyle. For almost 2 years, Seaquoia Wild Seaweeds has been harvesting seaweeds from California’s unique and bio-diverse coastal ecosystem. Ian strives to connect people to the source of their food while promoting environmental awareness, which has been his business philosophy from the start! Using chairs and other yoga props, this class is designed to create breath awareness, enhance balance, and increase flexibility for people new to yoga or those experiencing joint sensitivity, overall stiffness due to lack of activity, or other physical limitations. All classes end with restorative poses, using supports and gravity for deep relaxation... helping release tension and reduce stress. Miso Making Workshop

With Masumi Diaz and Eriko Yokoyama of Hakouya Cooking School Miso is a delicious, high-protein seasoning that has been used everyday in the Japanese kitchen for 1300 years. This traditional paste is made with cooked soybeans, Koji and sea salt, then fermented for about 6 months. The fermentation process restores beneficial probiotic that helps break down the amino acids in soybeans and makes other foods easier to digest.  In this class you’ll learn how to make 1.5 lb organic miso to take home. Masumi and Eriko will share different ways to incorporate miso into your everyday diet. Since this is a simple but lengthy process, ingredients will be prepared for you in advance and assembled together in class. About the instructors: Health nut friends Eriko and Masumi started making Miso, Natto, Pickled plum and Sauerkrau together for the family more than a decade ago. They learned so many things over the years about fermented foods and recognized the importance and benefits of it for gastrointestinal health. Both Eriko and Masumi grew up with a probiotic-rich traditional Japanese diet in Japan. Eriko learned authentic French cooking at Le Cordon Bleu in Paris and owned a restaurant for 13 years. Regional Spanish Cooking: Paella

With WSET Certified Kristen Valenza, Owner of Living Roots Food 831 Take a culinary trip to Valencia, Spain, in this hands-on class where Kristen will show you how to prepare traditional paella, and pair it with a Spanish red blend. Traditional paella is a mix of spanish rice, vegetables, meat, (like chorizo and sausage) and seafood, (clams, mussels, shrimp) and aromatic spices including parsley and saffron. Paella is a Valencian word, and comes from paelle, meaning pan. Spanish wine pairing included. About the Instructor: Kristen grew up in New Jersey where she began cooking with her family at a young age, learning the roots of Italian and Mediterranean cooking. Kristen found a passion for traveling and experiencing other cultures through food, wine, and good company. She brought her expertise to Santa Cruz, where she teaches cooking classes and offers high quality catering through her business Living Roots Food 831.
