We know it’s not usual for food stores to think of themselves as educators, but we’re not your usual market. A big part of our mission is to provide the latest information about health, nutrition and wellness to our community. So we invite top local experts and educators, including natural chefs, holistic nutritionists, acupuncturists, herbalists, and naturopathic doctors to share their knowledge with you in classes and workshops we host here at New Leaf. Eaten regularly, a protein-rich breakfast can be life changing! Learn how to incorporate protein-rich foods into your breakfast routine. Get tips for meals outside the breakfast box. Class # 2 Wednesday, January 15: Choose Smart Carbs- Carbohydrates, often referred to as carbs, are found in more than just bread. Of the three macronutrients – carbohydrates, fat, and protein – carbs have the greatest impact on blood sugar levels. Explore seasonal options for smart carbs, including vegetables, grains, and legumes. Class #3 Wednesday, January 22: Embracing Healthy Fats- Although our modern culture has distorted our perspective on fats, some fats are essential for optimal health. Historical and scientific evidence show that our ancestors did not suffer from many modern chronic diseases even though they ate wholesome, unprocessed fat-rich foods. Discover our favorite sources of fats and how they are part of a healthy diet. *Since we only have room for 20 class participants, seat priority will be given to those who pre-registered online. Please let us know if you are unable to make it.* About the Instructor: Madia graduated from Bauman College of Holistic Nutrition in 2013 after completing her BA in Environmental Studies and Exercise Sports Science at UCSB. Shortly after, she started her personal consulting business My Healing Habits. About the Instructor: Dr. Michelle Bean has been guiding people through the ketogenic diet and fasting protocols and has developed an efficient fat-burning starter protocol that includes two weeks of Ketogenic dieting followed by a 3-7 day fast. The Mediterranean diet emphasizes eating plenty of plant-based foods, such as fruits and vegetables, whole grains, legumes, nuts and don't forget the olive oil! Using herbs and spices is also a key component of dishes that originate in the Mediterranean. In this class we will cook four beautiful mediterranean vegetarian recipes while learning the basics of how to follow a healthy (vegetarian) mediterranean diet. Menu: Mediterranean Winter Salad Falafel plate, pea hummus, lemon aioli. Parmesan polenta with roasted vegetables. Fig and ricotta tart. Beer or wine pairing for those 21+ About the Instructor: Laura Casasayas was born in Catalonian, Spain and raised around food, stories and traditional cooking. Her grandmother taught her the magic of what ingredients make a delicious, nutritious homemade Spanish dish. Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu.
