In this 4-week series, Anti-Inflammatory Chef Magali Brecke and Holistic Nutritionist Madia Jamgochian will lead you through the basics of eliminating inflammation through diet and lifestyle. You will learn how to heal Leaky Gut, reverse autoimmune conditions, and get back on track to vibrant health. The four-class series breaks down as follows: 1. February 6: Intro to Inflammation, Leaky Gut, & Autoimmunity. In this two and a half hour class, Magali and Madia will provide a presentation on how inflammation affects the body, including what foods cause the biggest inflammatory response. Cooking demonstration & meal included. 2. February 13: Elimination Diets: There are quite a few anti-inflammatory diets out there these days. Learn the history of chocolate and experience flavors of cacao from all over the world. Our chocolate uses unprocessed, organic and fair trade cacao beans from Ecuador. The result is a delightful and heartwarming experience, unlike your typical store-bought chocolate. After this workshop, you'll know all about how to make chocolate at home! About the Instructors: Daniel and Karolina are part of the Fine Chocolate Industry Association, whose mission is to support the development and innovation of the fine chocolate industry and best practices. For 4 years they have been making their own chocolate. They have worked with local chocolate companies, hosted private chocolate making workshops, and more recently have created their own chocolate brand, CocoMo Chocolates.

With Eriko Yokoyama & Masumi Diaz of Hakouya Cooking School Kimchi is a traditional Korean dish of fermented vegetables such as napa cabbage and daikon radish. It can be used in soup, fried rice, sautéed vegetables or just eaten as a side dish. Kimchi is low-calorie, high fiber, and packed with vitamins. It is a powerful antioxidant and provides the benefit of probiotics in the form of lactobacillus bacteria. In this hands-on class, we will prepare the vegetables prior to the class and you will make and take home a jar of napa kimchi. Vegan Kimchi is also available. About the instructors:Health nut friends Eriko and Masumi started making Miso, Natto, Pickled plum and Sauerkraut together for the family more than a decade ago. They learned so many things over the years about fermented foods and recognized the importance and benefits of it for gastrointestinal health. Both Eriko and Masumi grew up with a probiotic-rich traditional Japanese diet in Japan. Eriko learned authentic French cooking at Le Cordon Bleu in Paris and owned a restaurant for 13 years. And now Masumi and Eriko are passionate about sharing the fermented food classes with our community!

Regional Spanish Cooking: Catalan Cuisine Date Night!

Catalan cuisine comes from the state of Catalonia in Spain, where they celebrate the Mediterranian diet, using ingredients like vegetables, fish, olives, olive oil, spices and legumes.  In this class Laura will teach you how to make classic recipes served in la Boqueria, a market located in las Ramblas Barcelona. La Boqueria is the most popular market in all over Europa and considered one of the best food markets in the world. We will explore classic Catalan dishes like: Pintxo d'escalibada with goat cheese, "Ocean and Mountain" meat balls and calamari with caramelized onion, and Catalan Cream for dessert, all paired with Spanish wine! About the Instructor: Laura Casasayas was born in Catalonian, Spain and raised around food, stories and traditional cooking. Her grandmother taught her the magic of what ingredients make a delicious, nutritious homemade Spanish dish. Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu. Laura has more than 10 years running her own practice in Spain. she Recently moved to Santa Cruz and has a very strong desire to keep educating and expanding awareness in mindful and healthy eating.

This class will go over how to choose the right elimination diet, and what’s in a name. We will cover the Autoimmune Protocol, (AIP) Gut and Psychology Syndrome (GAPS) Wahls Protocol, Traditional Foods, and the Paleo diet to help you decide which one is the most realistic and beneficial fit for you. Cooking demonstration & meal included. 3. February 20: Meal Planning for Success! To complete a successful elimination diet, preparation is key. Magali & Madia will go over meal planning a week at a time, demonstrating batch cooking techniques that will make throwing together dinner easy! Cooking demonstration & meal included. 4. February 27: Hands on Cooking. In our last class together, classmates participate in creating an anti-inflammatory recipe from scratch. We will discuss techniques, resources, and do a series review plus Q &A on what you have learned from the class. Full meal included. They launched their first Anti-inflammaotry series in October of 2016, and it was so successful they decided to offer it again in February. This class has now become a regular offering through New Leaf's Westside Community Classroom. The 4-week series provides a structured learning space and support group to get on board with the anti-inflammatory diet, and on your way to better health. Madia graduated from Bauman College of Holistic Nutrition in 2013 after completing her BA in Environmental Studies and Exercise Sports Science at UCSB. Shortly after, she started her personal consulting business My Healing Habits. She enjoys educating on how to heal inflammatory and autoimmune conditions, and believes in the food-as-medicine approach. Magali uses her background in Traditional Chinese Medicine to cook anti-inflammatory meals for personal clients, tailoring each menu to their dietary needs. In this class, your child will experience curiosity for how food preparation works, nutrition education and using our senses- sight, smell, taste, touch!  We will make sweet potato muffins, "turtle rice" with avocado and olives, tutti frutti lollipops with chocolate icing.  About the Instructor: Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu. Laura has more than 10 years experience running her own practice in Spain offering private consultation and workshops. She recently moved to Santa Cruz where she is continuing her passion of educating and expanding awareness of mindful and healthy eating.

With WEST Certified Kristen Valenza, Living Roots Food & Floral Enjoy the best of The Bay with local crab, salmon, shrimp, mussels, and clams, in a wonderful stew-based broth. Kristen will teach you how to make this traditional stew in a step-by-step process in this interactive hands-on cooking class. Cioppino originated in San Francisco in the late 1800's by Italian immigrants who moved to the North Beach area. The name of the dish comes from ciuppin which is the name of a classic soup from the Italian region Liguria, similar in flavor to cioppino but with less tomato and different types of seafood. This classic American-Italian dish will be served with fresh garlic bead, and paired with an Italian wine. About the Instructor: Kristen grew up in New Jersey where she began cooking with her family at a young age, learning the roots of Italian and Mediterranean cooking. Kristen found a passion for traveling and experiencing other cultures through food, wine, and good company. She brought her expertise to Santa Cruz, where she teaches cooking classes and offers high quality catering through her business Living Roots Food and Floral.
