Movie Night: Forks Over Knives

Forks Over Knives (2011) is an film that examines a profound claim that food is medicine! The major storyline in the film traces the personal journeys of a pair of pioneering researchers, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn, and their groundbreaking studies that brought them to meet each other. Their research led them separately to the startling and now shared conclusion: degenerative diseases like heart disease, type 2 diabetes, and even several forms of cancer, could almost always be prevented—and in many cases reversed—by adopting a whole-foods, plant-based diet. Despite the profound implications of their findings, their work has remained relatively unknown to the public... until now. The filmmakers travel with Drs. Campbell and Esselstyn on their separate but similar paths, from their childhood farms where they both produced “nature’s perfect food”; to China and Cleveland, where they explored ideas that challenged the established thinking and shook their own core beliefs. The idea of food as medicine is put to the test. Throughout the film, cameras follow ‘reality patients’ who have chronic conditions from heart disease to diabetes. Doctors teach these patients how to adopt a whole-food, plant-based diet as the primary approach to treat their ailments—while the challenges and triumphs of their journeys are revealed. Forks Over Knives utilizes state of the art 3-D graphics and rare archival footage. The film features numerous leading experts on health, examines the question “why we don’t know,” and tackles the issue of diet and disease in a way that will have people talking for years.

With Chef Eric Adema, Owner of Plus 1 Catering Food from Thailand truly exemplifies traditional southeast Asian food with minimal influence from the western culinary world. Thai food is fresh, healthy, and deeply satisfying with its vibrant flavors. Class will begin with Tom Yum Goong (Spicy Shrimp Soup) using the aromatic flavors of lemongrass & kafir lime leaves. Next, we’ll make Som Tum or green papaya salad with cashews & Yam Nua (marinated spicy rare beef) with spearmint & rau ram. We finish with the classic Pad Thai with shrimp, sprouts, tamarind, & peanuts. We will also include a Thai iced tea demo which will also be available to sample. Beer or wine will be available to pair with items as we snack on our creations throughout the evening for those 21+ About the Instructor: Chef Eric Jan Adema first learned his passion for food while cooking his great grandmother’s recipes with his mother as a kid. In 1989 his family took over the Boulders Inn in Connecticut, and by age 24 he became the head chef . Kick the Sugar Habit!

Added sugar hides in unsuspecting places such as sauces, soups, condiments and even sausages and hot dogs. Overconsuming added sugar, and carbohydrates in general, can put a strain on the body and lead to inflammation and elevated blood sugar, both of which have been shown to contribute to chronic disease. There are easy ways to reduce your sugar intake–education is the first step! Learn how to identify sugar sources, sugar swapping, balanced meals, and reading labels. Series breaks down as follows: Class #1: Wednesday, June 12: In the first class of the series, Madia will go over what excess sugar does to the body, and how it affects blood sugar balance. She will also share her six tips for success when it comes to skipping the sugar, ending class with sugar swap out ideas and recipes to keep you satisfied. Class #2: Wednesday, June 26: This class provides a check-in to see how attendees did over the past two weeks in terms of blood sugar, post meal energy slumps and cravings. Madia will share why it is important to balance out your sweet treats with protein, fat and fiber. Wellness Class with Dr. Danette Sutton This class will focus on the sources of heavy metal and chemical toxicity, how to test for it and how to safely and gently remove heavy metals. Heavy metal toxicity may prevent people from losing weight, getting healthier, and resolving chronic health issues you may not have realized are caused or hindered by heavy metal toxicity. These can include autoimmune diseases, dementia, TBI, autism, Parkinson's, MS, asthma, and many other conditions. Q&A period following the presentation. About the Instructor: Dr. Danette L. Sutton is a second generation chiropractor, born and raised in Santa Cruz. She received a BS degree from Santa Clara University in Combined Sciences and her DC degree from the Los Angeles College of Chiropractic in 1984. She was certified as an Applied Clinical Nutritionist in 2015. She has studied extensively in subjects including over one thousand hours in homeopathy, in addition to orthopedics, radiology and nutrition, among many other topics. She has a passion for improving health through chiropractic and nutrition and develops an individualized protocol for each patient. Health comes from the inside-out and this requires more time than simply cutting off a pain signal. Her treatment addresses the underlying condition and not just the symptoms.

Yoga Mix is a combination of stretching, flow, balance, Yin yoga, restorative, and meditation.  It is customized as best possible to the student needs.  Each class will wake up the muscles with some gentle stretching, then raise the heart beat with a flow which will incorporate strengthening and balance poses. The last part of class will be dedicated to longer held stretching poses (Yin), and a final restorative pose to start the day refreshed!

Using chairs and other yoga props, this class is designed to create breath awareness, enhance balance, and increase flexibility for people new to yoga or those experiencing joint sensitivity, overall stiffness due to lack of activity, or other physical limitations. All classes end with restorative poses, using supports and gravity for deep relaxation... helping release tension and reduce stress. Kick the Sugar Habit!

With Certified Nutrition Consultant Madia Jamgochian The average American consumes upwards of 150 pounds of sugar per year. Added sugar hides in unsuspecting places such as sauces, soups, condiments and even sausages and hot dogs. Overconsuming added sugar, and carbohydrates in general, can put a strain on the body and lead to inflammation and elevated blood sugar, both of which have been shown to contribute to chronic disease. There are easy ways to reduce your sugar intake–education is the first step! Learn how to identify sugar sources, sugar swapping, balanced meals, and reading labels. Series breaks down as follows: Class #1: Wednesday, June 12: In the first class of the series, Madia will go over what excess sugar does to the body, and how it affects blood sugar balance. She will also share her six tips for success when it comes to skipping the sugar, ending class with sugar swap out ideas and recipes to keep you satisfied. Class #2: Wednesday, June 26: This class provides a check-in to see how attendees did over the past two weeks in terms of blood sugar, post meal energy slumps and cravings. Madia will share why it is important to balance out your sweet treats with protein, fat and fiber. Class will discuss and try some of her favorite products, and recipes provided in the nutrition handout packet.  About the Instructor: Madia graduated from Bauman College of Holistic Nutrition in 2013 after completing her BA in Environmental Studies and Exercise Sports Science at UCSB. Shortly after, she started her personal consulting business My Healing Habits. She enjoys educating on how to heal inflammatory and autoimmune conditions, and believes in the food-as-medicine approach.

Cooking Class for Kids With Chef Laura Casasayas-Pala Let's explore how fun is to learn Spanish and cooking at the same time! This hands on kids class pairs language and cooking. During this two hour class, kids will work in teams to make different Spanish themed recipes. Teamwork helps us communicate better grasp the Spanish language more quickly! This creative class offers a different way of learning by using everyday (Spanish) vocabulary, in a new world of words and expressions that are a central part of our lives: cooking! In this class we will make: Melon and Ham kebabs and Tortilla Española.  Ages 8-12. *NOTE: if your child has special needs of any kind, please come 15 minutes early to speak with the instructor. About the Instructor: Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu. Laura has more than 10 years experience running her own practice in Spain offering private consultation and workshops. She recently moved to Santa Cruz where she is continuing her passion of educating and expanding awareness of mindful and healthy eating.
