Seeds, Beans and Grains Nutrition Class

As the Mexican mango season blossoms in the peak of our summer, we begin to crave more and more of this sweet, perfumy fruit. Despite mango being the most widely consumed fruit in the world, it is one of the most intimidating in our kitchens. This hands-on class takes the pressure off, teaching the basics and beyond of all things mango while celebrating the authentic food and flavors of Mexico.  Instructor Chef Nissa Pierson, mango aficionado will provide the basic need to know advice and techniques for all things mango. How to choose, store, cut and use. The menu for the class combines some of Mexico’s most dominant flavors while keeping it simple and cooling, which the peak of summer demands. Yoga Mix is a combination of stretching, flow, balance, Yin yoga, restorative, and meditation.  It is customized as best possible to the student needs.  Each class will wake up the muscles with some gentle stretching, then raise the heart beat with a flow which will incorporate strengthening and balance poses. The last part of class will be dedicated to longer held stretching poses (Yin), and a final restorative pose to start the day refreshed!

With Chef Eric Adema, Owner of Plus 1 Catering Vietnamese food is considered by many to be the best of the southeast Asian cuisines, possibly due to the culinary influences acquired during the French occupation. Unique, tasty combinations were the result and their world-famous street food is no exception! In this class you will learn how to make fresh shrimp springrolls with mint, greens, & mung bean sprouts. We will make pho’ noodle bowls with homemade star anise bone broth, rare beef, herbs & fresh lime. Class will finish with Vietnamese crepes with cardamom rubbed pork. As a bonus, this class will offer a sweet slow drip coffee demo which will also be available to taste for anyone needing a little “pick me up.” Beer or Sake will be available to pair with items as we snack on our creations throughout the evening for those 21+ About the Instructor: Chef Eric Jan Adema first learned his passion for food while cooking his great grandmother’s recipes with his mother as a kid. In 1989 his family took over the Boulders Inn in Connecticut, and by age 24 he became the head chef . In 2003, Eric moved to San Francisco where he worked as a chef & restaurant consultant for over 10 years. He now lives in Boulder Creek .

About the Instructor: Madia graduated from Bauman College of Holistic Nutrition in 2013 after completing her BA in Environmental Studies and Exercise Sports Science at UCSB.  Shortly after, she started her personal consulting business My Healing Habits. She enjoys educating on how to heal inflammatory and autoimmune conditions, and believes in the food-as-medicine approach.

Her grandmother taught her the magic of what ingredients make a delicious, nutritious homemade Spanish dish. Laura is a Spanish Acupuncturist, Dietitian and creator of the 11th Hour Coffee food menu. Laura has more than 10 years running her own practice in Spain. she Recently moved to Santa Cruz and has a very strong desire to keep educating and expanding awareness in mindful and healthy eating.
