Chicken Spinach Feta Pasta Salad


  • 1 pound penne pasta
  • 1 tablespoon extra-virgin olive oil
  • 3-4 links chicken spinach feta sausage
  • 2 roasted red peppers, chopped
  • 15 ounce can artichokes, drained and chopped
  • 1/2 cup chipped Kalamata olives
  • 1/2 medium red onion, finely chopped
  • 1/2 cup chopped flat leaf parsley
  • 1 pint cherry tomatoes, halved
  • 12 ounces Greek feta salad dressing
  • salt & pepper


  1. Cook pasta according to package directions, drain. Toss with olive oil and spread out on baking sheet to cool slightly. Simmer sausages covered in a large skillet with ½ inch water over medium high heat until done. Set aside to cool and then slice. Combine cooled pasta, cooled cooked sausage, red peppers, artichokes, olives, onion, parsley, tomatoes and salad dressing in large bowl. Toss to mix evenly. Add salt and pepper to taste. May be served at room temperature or cold.
