Cider-Braised Rutabagas


  • 2 pounds peeled rutabagas
  • 2 cups apple cider
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon chopped fresh thyme
  • Salt and fresh ground black pepper


  1. Dice the peeled rutabagas into 1-inch cubes.

  2. In a large saucepan, combine rutabagas and cider. Bring to boil, cover and simmer gently 1 –11/2 hours, or until completely tender.

  3. Transfer to food processor along with butter, brown sugar, nutmeg, thyme; puree in batches seasoning with salt and pepper to taste.
