In a large salad bowl, whisk together the shallot and lime juice and let stand 5 minutes. Whisk in oil, salt, and honey. Prepare grapefruit by peeling and cutting away any pith. Using a sharp knife, cut away the sections from the membranes. Toss together grapefruit sections and mustard greens with the prepared vinaigrette. Add any optional toppings.
