Lemon Dill Salmon


  • 1 1/2 pounds wild salmon
  • 1 teaspoon sea salt
  • 1 teaspoon freshly cracked black pepper
  • 2 tablespoons ghee
  • 1 lemon, zested and juiced
  • 1 tablespoon fresh dill, chopped


  1. Preheat oven to 400°F. Grease the bottom of a 9x13 baking dish. Sprinkle salmon with salt and pepper and place in the prepared dish. Mix together ghee (room temperature), lemon zest and dill. Place half of the mixture on top of the seasoned salmon, and spread across the surface of the fish. Bake for 10-15 minutes (or until up to temperature), checking for doneness after 10 minutes. Add the remaining ghee/dill/lemon zest mixture on top, add a squeeze of lemon juice and serve with lemon slices and dill for garnish.
