  • 3 cups leftover mashed potatoes
  • 3 eggs
  • 2 cups flour
  • 2 cups fine breadcrumbs
  • Vegetable oil, for frying


Pre-heat your oven to 350 degrees.

Refrigerate leftover mashers. When cold, form into balls—about the size of a golf ball or a little bigger. Put flour, egg and breadcrumbs in separate bowls. Roll the mashers in flour, then dip in egg, then dip in bread crumbs. Make sure all surfaces are good and coated.

Bring about an inch of vegetable oil up to 375 degrees (you can check it with a candy thermometer) in a heavy bottomed pot. Carefully place balls in oil, and don’t overcrowd. Keep moving them around until all sides are browned. Transfer first to a plate lined with a paper towel to absorb extra oil, then to a sheet pan. Put in a 350-degree oven for about 10 minutes to finish cooking all the way through.
