- 2 sweet potatoes, cut into 1/2” cubes
- 1 sweet onion, sliced
- 1 cup baby carrots
- 1 granny smith apple, sliced
- 4 New Leaf's chicken sausages
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp chopped fresh thyme
Preheat oven to 400F.
Combine potatoes, onions, carrots, apples, olive oil, salt, pepper, and thyme in a bowl; mix until combined.
Arrange sausages and vegetables on baking sheet in a single layer.
Bake for about 35 minutes, or until sausage reaches an internal temperature of 160 degrees, flipping everything once halfway through.
