In a separate bowl toss together coleslaw mix and add the amount of Thai and True Peanut Sauce you like to taste and consistency. Cover and refrigerate while grilling the meat and vegetables.
Prepare your grill to medium heat. Brush surface of the grill with coconut oil. Arrange skewers, whole scallions, bell peppers and onions on the grill surface. Cover and cook, 4-5 minutes. Turn skewers and all vegetables. Continue to cover and cook until meat reaches preferred temperature and vegetables have desired char about 4-5 minutes more.
Serve grilled skewers and vegetables on a bed of prepared coleslaw. Salt and pepper to taste.
