Under the Weather Miso Broth


  • 5 teaspoons barley or garbanzo miso
  • 1-2 teaspoons finely grated ginger
  • 2 bulbs of garlic, peeled and minced
  • 1 bay leaf whole
  • 1 green onion for garnish
  • 2 quarts stock or filtered water
  • optional: whole grain bread, toasted


  1. In a small pot blend the miso, ginger and minced garlic together making a smooth paste. Slowly add the broth and stir. Add bay leaf. Bring to a boil and then lower to simmer for 15 min. Garnish with green onion. Optional: Add cubes of toasted whole wheat grain bread to the bottom of bowl and ladle broth over.
