1 1/2 pounds cantaloupe (weight without seeds and rind)
1/4 cup lime juice freshly squeezed
1/4 cup honey
1/4 cup fresh mint, roughly chopped
pinch of sea salt
Cut the melon into small cubes and place on a baking sheet in freezer until frozen.
Place all ingredients in food processor and process until smooth. Serve immediately or add it to the freezer to set up further, if necessary.
