Ingredients

  • 1 pound ground beef (or sub ground turkey, pork, chicken, or even a combination)

  • 2 eggs, beaten

  • 1/2 cup milk

  • 1/2 cup grated Parmesan cheese

  • 1 cup panko breadcrumbs

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1 tablespoon Italian seasoning

  • 2 teaspoons Kosher salt

  • Black pepper to taste

Directions

  1. Preheat the oven to 350°F. In a large bowl, mix all ingredients together until well combined.
  2. To taste for seasoning, heat a small pan on medium heat. Form a small patty and cook on both sides until browned and the internal temperature reaches 155°F for beef or 165°F for all other proteins. Let cool for a few minutes and then taste for seasoning. If needed, add more salt, pepper, or Italian seasoning to your taste.
  3. Form the rest of the mixture into meatballs (about the size of golf balls) and arrange meatballs on a parchment or foil-lined, rimmed baking sheet. Place meatballs in the oven. Optional: To retain moisture and keep them from sticking to the pan, pour about 1 cup of water around them before baking.
  4. Bake for 30 minutes or until the internal temperature is 155°F for beef or or 165°F for all other proteins. Serve as is, with your favorite red sauce, or use in a sandwich.
