Sugar Cookies for Everyone

Sugar Cookies for Everyone
This recipe is sweetly nostalgic, but also designed to be incredibly versatile! To make a gluten-free variation, just use Bob's Red Mill Gluten-Free 1:1 Baking Flour instead of all-purpose flour. To make a vegan variation, use vegan butter, opt for granulated cane sugar instead of honey, and add 1/2 cup melted coconut oil instead of egg.

Ingredients

Cookies:

  • 1 stick of butter, softened

  • 1/2 cup honey

  • 1/2 teaspoon vanilla

  • 1 egg, lightly beaten

  • 2 cups all-purpose flour

  • 1 teaspoon cornstarch (or tapioca flour)

  • 1/2 teaspoon salt

  • 1 teaspoon baking powder

Icing:

  • 1 1/2 cups caster or fondant sugar, sifted

  • 2 tablespoons milk or hot water

  • 1 teaspoon vanilla extract

COOKIES

  • 1 stick of butter softened

  • ½ cup honey

  • ½ tsp vanilla

  • 1 egg, lightly beaten

  • 2 cups All Purpose flour

  • 1 teaspoon cornstarch (or tapioca flour)

  • ½ tsp salt

  • 1 teaspoon baking powder

ICING

  • 1 ½ cups caster or fondant sugar, sifted

  • 2 Tbls milk or hot water

  • 1 teaspoon vanilla extract

Directions

  1. Start the cookies. Using an electric mixer, cream together butter and honey. Add vanilla and egg. In a separate mixing bowl, combine flour, cornstarch, salt and baking powder.
  2. Slowly add dry mixture to butter mixture until dough is well combined and uniform. Refrigerate dough 30-60 minutes, until firm.
  3. Preheat oven to 300°F. On a lightly floured surface, roll dough to ¼” thick and cut into shapes. Bake in preheated oven for 10 minutes.
  4. After baking, cool cookies on baking sheet for 5 minutes before transferring to a wire rack. Let cool completely before icing.
  5. To make the icing, stir icing ingredients to combine, adding color if desired. Frost and serve, or give as gifts!
